How to Prepare Perfect Gazpacho


  • 2 pounds tomatoes, diced
  • 1 cubanelle pepper, seeded and roughly chopped
  • 1 cucumber, peeled and roughly chopped
  • 1/2 onion, roughly chopped
  • 1 clove garlic
  • 1/2 cup olive oil
  • 3 tablespoons sherry vinegar
  • Kosher Salt


Put the diced tomatoes, cucumber, crushed garlic, onion and pepper in your blender and process until smooth. It's likely that the ingredients don't fit in the blender, just remember that you can work in batches. Now, add the vinegar, olive oil and season to taste.


Strain your gazpacho and put it in your refrigerator allow it to chill for a day. You can serve it in a glass with a couple of ice cubes and garnish with parsley or mint. Gazpacho has its origins in Spain, specifically in the region of Andalusia, however you don't have to travel to this country to enjoy this delicious soup.
